  2. Heat oil in pan- when oil is hot add fennel, red chilli, asafoetida, and ginger and turmeric- cook it for few seconds..
  3. Add ridge gourd, salt and mix it well..
  4. Cook it on low flame for 7-8 minutes.the add red chilli powder, cumin coriander powder and garam masala.
  5. Add patra, mix it well and cook for another 3-4 minutes on low flame..
  6. When it’s done – switch off the gas and add chopped coriander and serve it hot with roti or puri..

Turia Muthia nu Shaak is an authentic Gujarati recipe that is made from ridge gourd also known as turia or turai and cooked in fenugreek leaf dumplings called muthia.
