The ingredients needed to make Idli and Bottle-gourd Sambhar:

  2. {Prepare 1/2 cup of urad dal (soaked overnight).
  3. {Get 1 cup of plain rice (soaked overnight).

  5. {Get as required of Ghee or oil to grease.

  7. {Make ready 1/2 bowl of Toor daal.
  8. {Prepare 1 of medium sized fresh bottle guard (cut in squares).
  9. {Make ready 1-3 tsp of Sambhar powder.
  10. {Prepare 8-10 of Curry patta.
  11. {Take 1 tsp of Chana dal.
  12. {Prepare 1 tsp of Urad dal.
  13. {Prepare 1 tsp of Mustard seeds.
  14. {Make ready 2-4 of green red chillies cut in halves.
  15. {Get 1 tsp of turmeric powder.
  16. {Make ready 1 tsp of coriander powder.
  17. {Prepare 2 tsp of Oil.
  18. {Take 1 tsp of Jaggery or shakkar.
  19. {Prepare as required of Water.

Kick start your day with a warm bowl of Idlis (soft & spongy rice cakes) dunk in a delicious bowl of Sambar (vegetable lentil soup). This is traditional Tamil Nadu style sambar which is very healthy, with the combination of lentils and bottle gourd. You can replace bottle gourd with other vegetables like brinjal, pumpkin, drumstick, beans, peas or can use mixture of these vegetables. Idli Sambar is a complete food in itself as it contains all the essential nutrients, minerals and vitamins that are essential for your overall health.

Instructions to make Idli and Bottle-gourd Sambhar:

  1. Grind the rice and urad dal and mix together. Put into a large container and let it ferment. After it is fermented add salt and grease the idli stand. Pour a small quantity of batter in stand and steam for around 5-7 mins. Take out if a toothpick inserted in it stands clean..
  2. Heat the oil, add mustard add some seeds, curry patta, urad dal, chana dal, chillies etc. Add turmeric, coriander, jaggery and sauté for a couple of min..
  3. Boil soaked chana dal and lauki along with some salt and cook until done. Add this lauki, chana dal to the Tadka and cook for a few more minutes..
  4. Serve this when hot..

Different vegetables like beans, carrot, drumstick, etc. present in the sambar provide enough fiber that aides your digestive health. Moreover, idlis are steamed and sambar contains very little. Sorakkai sambar / Bottle gourd sambar with freshly ground spices (Arachuvitta sorakkai sambar in Tamil) is an yummy, flavorful sambar recipe for rice. I have never tried varieties of sorakkai recipes for rice apart from paal kootu , Poricha kuzhambu , sorakkai dosai and poriyal. Udupi style vegetable Sambar can be prepared using any vegetables of your choice.
