  1. Boil noodles to Al Dente ….
  2. Strain noodles immediately..
  3. Put noodles in a bowl and cover in ice to chill and put in fridge..
  4. In a separate bowl, mix garlic, soy sauce, sesame oil, sciracha sauce, mandarin oranges, orange juice, chili flake, simple syrup and, pickled ginger and MIX WELL. Let sit for 15 minutes room temp..
  5. Get a presentation bowl or plate ready..
  6. Twirl noodles with a large fork and transfer to final bowl for serving..
  7. Spoon over the fruit and sauce mixture on top of the noodles..
  8. Optional seaweed, dried egg yolk and bonito flakes for extra garnish..

I am using a blood orange olive oil from Spicewood Food Company and it can be purchased on-line at Spicewood Food Company. When noodles are done, strain them immediately to prevent further cooking. Slice snow peas in half lengthways. To make the dressing, in a small bowl, whisk the orange juice, rind, ginger juice, mirin, brown rice vinegar, shoyu and sesame oil. Add the blanched and fresh vegetables.
