We recommened using Siakap, seabass, stingray, or Pari fish. Sambal stingray, also known as Spicy Banana Leaf Stingray and by the Malay name Ikan bakar (barbecued fish), is a Malaysian seafood dish. Prepared by barbecuing stingray, it is served with sambal paste atop. Sambal stingray can be easily purchased at hawker centers in both Malaysia and Singapore.

Steps to make Baked Spicy Stingray / Sambal Ikan Bakar:

  1. In pan with oil saute spicy sauce with onion for 1 minute then add light soy sauce then off heat.
  2. Season well with salt and pepper, then put the stingray on a banana leave, top ready cooked spicy sambal together with onion then close 4 corner tightly and bake 200 C for 20 minute.
  3. Drizzle Some Lime juice, onion, cucumber and some fresh coriander leaves and serve.

It's called ikan panggang or ikan bakar and sold by street vendors or in restaurants. This fish grill is usually wrapped with layers of banana leaves, marinated with spice-laden marinade called sambal (spice paste) and grilled over charcoal fire.
